Scrambled Eggs with Smoked Salmon

Ingredients
  • 1/4 pound of sliced smoked salmon
  • 12 eggs
  • 1/2 cup of heavy cream
  • Freshly ground black pepper and salt
  • 2 tablespoons of butter
  • 12-15 blades of fresh, finely chopped chives
Directions

Firstly reserve two slices of salmon for garnish. After that chop the remaining salmon into very small pieces.
Then whisk your eggs and cream together and add 1/2 of your chopped chives and season eggs with salt and pepper. In the meantime preheat a large nonstick skillet over medium heat. Then melt butter in the pan and add eggs. You should scramble eggs with a wooden spoon but do not cook eggs until dry. Stir in chopped salmon when eggs have come together but remain wet. Then remove pan from the stove and place on a trivet. In the end garnish the eggs with remaining salmon and chives and serve right out of the warm pan. Enjoy your meal!
