Ingredients
5 tablespoons of unsalted butter
1 1/2 pounds of boiling potatoes, peeled and half-inch diced
1 1/2 cups of chopped yellow onions, two onions
2 teaspoons of kosher salt
1 teaspoon of freshly ground black pepper
1/2 pound of cooked turkey, cut in one-inch cubes
2 tablespoons of minced fresh flat-leaf parsley
2 tablespoons of minced scallions, take white and green parts
Directions
First melt the butter in a large, 10-12-inch, saute pan. Then add the onions, potatoes, salt, and pepper and cook over medium-low heat for about 15-20 minutes, turning occasionally with a flat spatula, until the potatoes are evenly browned and cooked through, but you should allow the potatoes to cook for about five minutes before turning. Then add the cooked turkey and heat for about 1-2 minutes. After that turn off the heat and add the parsley and scallions and serve hot. Enjoy.
