Scrambled Eggs with Chorizo

Ingredients

4 ounces of Mexican chorizo, removed from casing
8 large
lightly beaten eggs
3 medium
thinly sliced
scallions for garnish
3 tablespoons of roughly chopped fresh cilantro leaves
Sour Cream for garnish


Directions 
Firstly heat a medium nonstick pan over medium heat and add chorizo. Then cook, using the back of a spoon to break it up, until cooked through, for about 2-3 minutes. After that add eggs and cook stirring occasionally, until set, for about 3 more minutes. In the end serve garnished with scallions, cilantro, and sour cream. Enjoy your meal!
