Corned Beef Homie Home Fries

Ingredients
 

Kosher salt
2 pounds of red-skinned potatoes, cut into 1/2-inch pieces
5 tablespoons of extra-virgin olive oil
1 tablespoon of unsalted butter
1 cup of diced red onion
1/2 cup of diced Anaheim chile pepper
1/2 cup of diced red bell pepper
8 ounces of diced corned beef
3 tablespoons of minced garlic
1 teaspoon of paprika
Freshly ground pepper
Shredded cheddar cheese,
sour cream, sliced avocado, and sliced scallions, for topping

Directions
 

First bring a large pot of water to a boil and add one teaspoon salt. Then add the potatoes and cook until almost fork-tender, about five minutes. After that drain the potatoes and pat dry with paper towels.

In the meantime, heat two tablespoons olive oil and the butter in a large saute pan over medium heat. Then add the onion, bell pepper, chile pepper and corned beef and saute until the onion is translucent, for about five minutes. After that add the garlic and paprika and season with pepper and salt. Then cook two minutes, and then remove the mixture from the pan and keep hot. After that add the remaining three tablespoons olive oil and the potatoes to the same pan and then cook, turning occasionally, until crispy on all sides, about twelve minutes. Then add the corned beef mixture and combine thoroughly, being careful to not break the potatoes.

In the end serve the home fries topped with cheese, avocado, sour cream and scallions. Enjoy your meal.
