Grilled Steak and Eggs with Beer and Molasses

Ingredients

For the sauce:
1 1/2 teaspoons of unsalted butter
1/2 medium
finely diced onion
1 clove minced garlic
1 cup of ketchup
1/2 cup of molasses
1/2 cup of apple cider
2 tablespoons of sugar
1/2 cup of lager-style beer
1 1/2 teaspoons of yellow mustard
2 teaspoons of lemon juice
1 1/2 teaspoons of Worcestershire sauce
1 1/2 teaspoons of cayenne pepper
1 1/2 teaspoons of paprika
For the steak and eggs:
2 one-pound strip steaks (1/2 inch thick)
Freshly ground pepper and salt
1 tablespoon of vegetable oil
4 grilled eggs


Directions
 

Making the sauce: Melt the butter in a medium saucepan over medium heat. Then add the onion and garlic and saute until softened, for about three minutes. After that add the rest of the sauce ingredients; bring to a boil, and then simmer until the sauce is reduced to two cups, for about thirty minutes. 

In the meantime, preheat a grill to medium-high. Then season the steaks with salt and pepper and rub with the oil. You should grill for 3-5 minutes per side for medium-rare. Then let rest for ten minutes before slicing. After that serve with the beer-molasses sauce and the grilled eggs. 

Making grilled eggs: First place a cast-iron skillet on the grill, and add butter, oil or bacon drippings. Then crack in eggs and season to taste. After that cook until the edges are crisp but the yolks are still runny, two to three minutes. Enjoy your meal.
